I stumbled across foodgawker the other day. (Seems like a website where people just link up different recipes from there blog.) I found this recipe that looked so delicious and perfect for the cold months. Chipotle Tomato Soup. It is super easy and pretty tasty too. Ours was a little too spicy (Nolen snuck in some extra hot sauce), but I feel it would have been perfect without it.

Ingredients
1 can 28oz whole peeled tomatoes
1 chipotle pepper in adobo sauce
1/2 medium onion cut into chunks
salt and pepper
1/4-1/2 cup milk (or heavy cream)
croutons and feta cheese for topping
Directions
Pre-heat oven to 400˚. In an 8x8 pan combine the can of tomatoes, onions, and chipotle pepper*. Place in oven and cook for 40 minutes. Once tomatoes begin to brown, remove from the oven and pour into a pot. With an immersion blender, puree tomatoes (if no immersion blender, use a regular blender.) Add enough milk to bring to a consistency you like and re-heat the soup. Pour into the bowls and top with croutons and feta.
